Making S'mores Pancakes!

I am so excited about sharing on Growing a Jeweled Rose today. It is quite an honor to be here. I love stopping by to see what Crystal is sharing. My four year old and I love to explore the ideas shared here at our house.

Did you know that August is National S'more Month? I didn't realize it until I looked for fun and unique holidays in August online at the beginning of the summer.

My son  doesn't really like traditional s'mores. I think some of it has to do with the difficulty he has had in holding all the pieces together.

He does love all of the ingredients in a s'more. He will inhale any or all of them when they are not put together.

I thought it would be fun to combine two of the ingredients into one of his favorite foods and give him the remaining ingredient to build a fun breakfast sandwich.

We started by mixing 3/4 cup of pancake mix with 1/4 cup of graham cracker crumbs.



Then he added 3/4 cup of water  and three tablespoons of mini chocolate chips to the mixture.


My son loves to mix. He is in  fact a two fisted mixer at times.

After he finished mixing, I baked mini pancakes for him.


When they were done, he placed mini marshmallows between two mini pancakes to create a s'more pancake sandwich.

He really seemed to enjoy them!
